Thayir Sadam - Curd Rice

Thayir Sadam AKA Curd Rice - This is my most favorite food. Any time of the year, any time of the day, I never hesitate to eat curd rice. (Curd is similar to plain Yogurt or Desi Yogurt)
What makes this dish so special? The same reason why Swiz is now famous - Neutrality.
Its neutral in flavor, its neutral in taste, its neutral to the body conditions, it is harmless. The curd rice completes a meal. However big feast you eat, the last couple of scoops of curd rice is always necessary. I do not if I am the only one, but I finish all my food with a splash of curd - idli, dosa, roti, anything - the last couple of bites will always have curd in it.

But is it very simple to prepare this dish? I am not sure if I can say yes.
Let me start with my experimentation with curd and rice.
1. Simple Curd Rice - Preferably eaten cold/ room temp
Ingredients: Rice, Curd, Salt
Add curd to the rice
Add salt if needed (to taste)
2. Tempered Curd Rice - This is preferred when curd rice is boxed since the rice will taste good even when the curd rice starts to sour.
Ingredients: Rice, Curd, Salt, Oil (1 tsp), Mustard, chana dal, diced chilli (1 red/ 1 green, 2 white*)
Prepare the simple curd rice.
In a tempering pan, add 1 tsp of sunflower oil.
Add mustard to the hot oil and let it splutter.
Add chana dal and chilli of your choice and allow it to fry.
Once ready, add it to the simple curd rice. Now you get my tempered version. This
Add 1 tbsp of chana dal
3. Special Curd Rice - As the name suggests, this can be restricted for special conditions since the calorie count is on the high for the variation.
Ingredients: Rice, Curd, Salt, Cashew (halved), raisins (dry grapes), ghee (1 tsp)
Prepare the simple curd rice
In a hot tempering pan, add the ghee
Just as the ghee is getting all hot (you can see some white smoke coming out of it), add the cashews first and fry.
Make sure you do not overburn the cashew.
Turn off the stove and add the raisins and fry it in the remaining heat
Add this to the simple curd rice and yummy curd rice is ready to serve.
